Maple Roasted Peach & Yogurt Popsicles

I'm not usually a very dessert-y person, but this summer has been a little indulgent. Lots of frozen treats in Belize, followed by strawberry-rhubarb and apple treats in Minnesota, and now I cannot seem to get off the sugar train. Fortunately, I have these AMAZING popsicles to help me out! They are refined sugar free and the only added sweetener is a drizzle of maple syrup. Plus, see those cute little stars? That is cereal from LoveGrown, my new favorite cereal brand, and I mixed a few of those gems into the yogurt half of the popsicles. SO GOOD. My boys love traditional sugary cereals and I don't want to stifle their excitement, but I do want to give them something I know will do good things for their bodies. The kids choices from LoveGrown are a big hit here, plus they are made with beans and very little sugar, which makes them a big hit for me too! *Camera pans over to me, pj's and Netflix on, eating a bowl of the kids' cereal with unsweetened almond milk at 11pm*

If you're the kind of person who likes to plan ahead, I would suggest making a big batch of the roasted peach puree because you can freeze and use it on a rainy day! Mix it into yogurt or cocktails or smoothies...so many ways to use this beautiful stuff.

makes about 6 large popsicles*

for the peaches: 

  • 3 large, ripe peaches, halved and pit removed
  • 2 tablespoons pure maple syrup
  • cinnamon for dusting

for the yogurt

  • 2 cups plain, mild tasting Greek yogurt (Noosa and Tillamook are my favorites)
  • 2 tablespoons pure maple syrup
  • LoveGrown cereal (optional) 
  1. Preheat the oven to 400 degrees Fahrenheit. Place the peaches on a parchment lined baking sheet and drizzle with the maple syrup and sprinkle with cinnamon. Roast for 30 minutes. Cool completely, then pulse in a blender until completely smooth. (If your blender has a tough time blending skins from fruit, feel free to remove them from the peaches.) Set the puree aside to cool. 
  2. In a medium bowl, stir the yogurt with the maple syrup. If desired, fold in a couple handfuls of the LoveGrown cereal. You can also stir in toasted oats or nuts if you prefer. 
  3. Begin by filling 6 popsicle molds evenly with the peach puree. I filled mine about halfway. Transfer to the freezer for about an hour. They do not need to be completely frozen at this point, just enough to keep the peaches and yogurt separate. Top the peach puree with the yogurt and add the popsicle sticks. Return to the freezer and freeze until hardened all the way through, about 6-8 hours.
