Vegan Fudgsicles

We went camping for the 4th of July weekend this year. With a 4 year old and a 1 year old. And two dogs. Yep, we did that. Now, to most people that might sound completely insane but for some reason we thought it would be brilliant. And for the most part, it was absolutely (and surprisingly) wonderful. But by the time we got home we were all exhausted after getting little to no sleep because we were all freezing our keesters off in our tents. One of the first things I did after we got the boys down for naps was take a shower, put on clean clothes, and curl up under a cozy blanket. I slept for 3 hours. It was bliss.

This week has been for resting, getting some work done, doing all the laundry, and enjoying summer with my little boys. Yesterday, we decided fudgsicles needed to be made, so I broke out these ridiculously adorable dino pop molds from Zoku. These creamy, decadent treats are perfect when you want a little something sweet but don't want to completely derail your healthy summer eating plan. I was worried that they wouldn't turn out looking as detailed and cute as the picture on the package, but they were kind of perfect. There are also the perfect size for tiny hands... 

I know we'll be using these molds a TON this summer, but I don't know if I want to venture too far from these delicious Vegan Fudgsicles. Helloooooo coconut cream, chocolatey goodness! Oh, and no refined sugar makes me super happy to give these to my kiddos. And, who am I kidding, to myself!

Vegan Fudgsicles

Makes 6 fudgsicles (plus a little extra to use in case you have other popsicle molds on hand)

  • 1 can Trader Joe's Coconut Cream*
  • 1/2 cup cocoa powder
  • 2-3 tablespoons maple syrup
  • 1/2 to 1 cup unsweetened almond milk
  • 1/2 teaspoon vanilla extract
  1. Combine all ingredients (beginning with 1/2 cup almond milk) in a blender and blend until smooth. If you need to, add more almond milk so the mixture is pour-able.
  2. Fill dino pop molds or other mold with the mixture.
  3. Freeze 8 hours before devouring! Rawr!

*I was pretty specific with this ingredient because coconut milk/cream can vary greatly. However, feel free to give any brand of coconut milk a try! I have been using only TJ's coconut cream, but I'd love to hear from you all about how other brands worked for you!
