Spiced Orange Yeasted Coffee Cake

Lifelong Minnesota ELCA Lutheran here! Yep- hymn singing, church basement potlucking, sweater wearing Minnesota Lutheran. It’s a whole thing and I love it. 

While I’ve been a solid Lutheran the majority of my life, I’ve spent a lot of time floating around searching for a church home in my adult life. Finding a place that fills the cups of everyone in our family has been a challenge. That’s why, when we first sat down at Gloria Dei Lutheran Church about a year ago, I all but sobbed at the feeling of home that washed over me. I could feel the immense love filling the space. I could see it in the little details, like the inserts in the hymnals explaining how to love and welcome families with small children, the way members warmly spoke to one another, the way the pastors looked each member in the eye, clearly and genuinely appreciating their presence, and the message that all are welcome and loved and treated with respect. 

Yep. Cue the tears. 

Of course, when we first started attending Gloria Dei, I couldn’t have predicted how much we would rely on this family of (then) strangers. We were fortunate to find some of the best friends we have here in Minnesota at this church, and having those relationships solidified before the pandemic began has proven to be life giving. 

Of course, now we meet virtually on Sunday mornings. But because of the strong sense of community that has been so thoughtfully woven through the congregation, the connection is something we have relied on heavily through the past 6 months. It is truly a gift. Now, I’ve been able to do something I’ve missed so much: share food with others as a sign of love and support. Well, sort of. I’ve created this recipe for Gloria Dei Lutheran Church in St. Paul in the hopes folks will make and share it with their family, friends, and neighbors. There’s nothing quite like coffee and donuts after church, but I hope this serves as an acceptable (and delicious) alternative. 

Best enjoyed with coffee and a good choral rendition of “Abide with Me”. Extra points if you’re wearing a Nordic sweater.

Spiced Orange Yeasted Coffee Cake

Ingredients

for the cake:

  • 3 to 4 cups all purpose flour

  • 1/4 cup sugar

  • 1 1/2 teaspoons salt

  • 2 1/4 teaspoons yeast

  • 3/4 cup warm milk (around 100° F)

  • 1 large egg plus 1 large egg yolk

  • 1/2 cup unsalted butter, room temperature

for the filling:

  • zest of 2 oranges (save half for topping)

  • 1/4 cup sugar

  • 1/2 cup brown sugar

  • 2 teaspoons cinnamon

  • 4 tablespoons unsalted butter, room temperature

for egg wash:

  • 1 egg, beaten lightly

  • 1 tablespoon heavy cream or water

for the topping:

  • remaining orange zest

  • 1/4 cup brown sugar

  • 1/4 cup sugar

  • 1/2 cup all-purpose flour

  • 4 tablespoons unsalted butter, room temperature

  1. Whisk the 3 cups of flour, sugar, and salt in a medium bowl and set aside.

  2. In the bowl of a stand mixer, sprinkle the yeast over the warm milk with 1/2 teaspoon sugar and let stand for 5 minutes until foamy. Add the egg and egg yolk to the milk, then sprinkle in the dry ingredients. Mix with the dough hook for 1 minute.

  3. Add 1/2 cup room temperature butter and mix again, at medium speed, until incorporated. Scrape the sides of the bowl as needed. If the dough seems overly sticky, add more flour 1/4 cup at a time. You may use all the flour or you may need more. In the end, you want a dough that is smooth and a tiny bit tacky. Cover the bowl with plastic wrap and let rise in a warm place for 1-1 1/2 hours until it has doubled in volume.

  4. While your dough rises, mix together the filling ingredients in a small bowl. Use a fork or pastry cutter to combine until crumbly and set aside.

  5. Preheat the oven to 375°F and prepare a clean, floured work surface. Punch the risen dough down and turn it onto your work surface. Gently roll the dough into a rectangle about 20 x 8 inches. Brush the edges with your egg wash in a 1 inch border, then spread the filling evenly over the surface of the dough, leaving the edges clean.

  6. Roll the dough firmly and carefully into a long log. Create a seam by pinching the dough together to seal.

  7. Shape the dough log into an upside down 'V', then twist it twice, pinching the ends together to seal. Transfer the dough to a greased loaf pan. Brush the top with egg wash and cover to rise for 20 minutes.

  8. Mix the topping ingredients together, using a fork, until crumbly and with some visible flour coating the clumps. When the cake has finished its final rise, sprinkle with the topping.

  9. Bake for 55 minutes to 1 hour. Place a foil lined baking sheet underneath the pan to catch any topping that happens to fall as the cake rises. *NOTE: If the top browns too quickly, cover it loosely with foil after the first 45 minutes baking time.

  10. Allow the cake to cool for a minimum of 10 minutes and up to 1 hour before removing from the pan and serving or delivering to a friend.

The 6 year old wasn’t feeling so good this morning. He slept very late and I let him because one day he won’t be able to just sleep in when he’s under the weather. But when you’re 6? That’s definitely allowed. After a slow start to the day and getting little brother to school, the 6 year old and I decided waffles were in order! Don’t tell anyone, but I love waffles WAY more than pancakes. No contest. Unless the pancakes are from Snooze in which case I want them all. Maybe it has something to do with how the syrup pools in the little squares. Or how the outside gets so nice and crispy. Or how you can break them into tidy little triangles. Whatever it is, I am here. for. it.

Disclaimer: These waffles are not “health food”. They have half a stick of butter in them and I’m not sorry because if you’re going to eat waffles you might as well do it right. Are you with me? They don’t have a ton of sugar and I did use a bit of whole wheat flour, but mostly for flavor so don’t get too excited. Or get REALLY excited because you’re gonna love these forever and ever amen.

OK- no more delaying. On to this perfect waffle recipe! Make them for your family. Make them for friends. Make them for houseguests and don’t forget the coffee! Also, they freeze beautifully so don’t be afraid to double the recipe and freeze what you don’t eat. Just pop them in the toaster and you’re golden!

Brown Butter Vanilla Waffles

  • 1 cup all purpose flour

  • 1/3 cup whole wheat flour

  • 4 teaspoons baking powder

  • 1 teaspoon salt

  • 1 teaspoon vanilla extract

  • 2 eggs, beaten well

  • 1/2 cup unsalted butter

  • 1 3/4 cups milk

  1. Begin by browning the butter. Add it to a saucepan over medium heat. The butter will melt, then start to sputter and foam, then it will all settle down and the milk particles will start to turn golden brown and a nutty aroma will fill your kitchen. Keep an eye on the butter through this process so it doesn’t burn! Stir occasionally, being sure to scrape the bottom of the pan. Transfer to a heatproof liquid measuring cup and set aside.

  2. Whisk the dry ingredients together in a large bowl. Set aside.

  3. In a medium bowl, whisk the eggs with the milk and vanilla. Add the milk mixture to the dry ingredients and stir with a wooden spoon until combined. Pour in the browned butter and stir until incorporated.

  4. Preheat a waffle iron. They’re all different. I set mine to a medium temperature, but you do you Boo Boo!

  5. Pour about 1/3 cup of the batter in the center of the waffle iron. Keep the waffles warm in a 200 degree oven until ready to eat. Serve with more butter (because #yolo) and syrup. And coffee. Lots of coffee. Enjoy!

Easter is tomorrow! Yippee! I love Easter. It's always such a happy, joyful morning for religious reasons of course but also because it feels like the official 'Welcome Spring' day. When I was a kid, my mom dressed my sister and me in frilly pastel dresses, white lacy gloves and girly hats. Her Southern soul just needed her girls to be dressed to the nines on such an important holiday and, truthfully, I loved it.

I may not wear those things these days (I might get some strange looks if I did) but I do try to make some special dishes to help celebrate Easter with my family. I think serving coffee or tea at the end of a nice meal is a requirement. It provides time for everyone to relax and linger at the table just a little longer, talking about life and how full your tummy is and what you enjoyed the most about the meal. There is nothing like those last, sweet moments around the table reflecting on the time spent with those you love. This lavender latte is the perfect way to close a fabulous meal.

Miso Deviled Eggs

How is it almost Easter already? I mean, seriously. Time needs to slow the train down. Despite the fact that this holiday often sneaks up on me, Easter has always been one of my favorite holidays when it comes to food. We are creatures of habit on my fathers side of the family and our spread always includes my grandma's deviled eggs, my aunt Joanne's sticky caramel rolls, my uncle Steve's Bloody Marys and, of course, lots of locally made sausage and a glazed ham.

Truth time: When I growing up in Minnesota, I think I stuffed my face the most at Easter. To an embarrassing degree.

Ok, glad I got that off my chest. I feel like we are closer now, you and I. Yes?

One of the reasons I love cooking is because I get to take pieces of my life and bring them together when they might otherwise remain separate entities. Here, I've taken deviled eggs, which will forever and always make me think of my grandmother, and added ingredients that reflect our time spent in Japan. White miso paste, hot mustard, and shichimi togarashi come together in these eggs to create something new for your Easter brunch. A couple of these alongside my Japanese Bloody Mary would be absolute perfection.

Another change I made to these eggs was using Greek yogurt in place of mayonnaise. I think Greek yogurt gives the yolk mixtures a lighter, fluffier consistency that is a welcome contrast to the bold flavor of miso and hot mustard. I used Tillamook Farmstyle Greek Yogurt, which is mellow and creamy and absolutely perfect in these deviled eggs.

The icing on the cake? Fresh chives cut directly from my garden. Glorious.

Miso Deviled Eggs

Ingredients

  • 1 dozen eggs, room temperature
  • 1 1/2 teaspoons hot mustard
  • 2 tablespoons white miso (shiro miso)
  • 2/3 cup 2% or full-fat plain Greek yogurt (I used Tillamook because of it's mild, creamy flavor)
  • 1/4 cup chopped chives or green onions
  • Shichimi togarashi or other fine red pepper flakes for garnish (you can also use paprika in a pinch)
  • salt & pepper to taste (optional)

Instructions

  1. Prepare an ice bath in a large bowl before you begin hard boiling the eggs.
  2. Gently set the eggs in the bottom of a large pot and fill with cold water until the eggs are covered by about one inch.
  3. Place the pot over medium heat and bring to a low boil.
  4. Turn off the heat, cover the pot, and let sit for 6 minutes.
  5. Remove the eggs from the pot with a slotted spoon and transfer to your prepared ice bath.
  6. When the eggs have cooled (after about 10 minutes) peel the eggs by first tapping them against the countertop. I like to crack around the equator of the egg and at each end.
  7. Using the side of your thumb, carefully peel away the egg and the thin membrane between the egg shell and the egg itself.
  8. After hard boiling the eggs and removing the shells, cut them in half and remove the yolk using a small spoon. Collect the yolks in a medium bowl and set the emptied whites on a large plate.
  9. In the bowl of a food processor, combine the yolks, mustard, yogurt, and miso paste and pulse until smooth. Stir in the chives.
  10. Using a teaspoon, fill each egg half with the yolk mixture. Garnish with a few additional chives and the shichimi togarashi.
  11. Arrange the eggs on a platter and serve chilled.
